Goblin’ Good Fruit
Salad
Changing the ingredients of snacks
and desserts without using sugar and high calorie
carbohydrates requires some heavy duty out-of-the-box
thinking.
Here is one way to serve a stylish
Thanksgiving or Festive Holiday dessert.
Please Note - this recipe
requires cutting with a knife and using a vegetable
peeler, so please let an adult do the cutting
and share in the fun!
Ingredients:
1 Large Red Apple
4 Carrots
1 Orange
1 Banana
1 Pomegranate
1 Pear
Slivered Almonds and/or Pumpkin or Sesame seeds
Here’s what you
do:
Scrub and clean all the fruit.
Cut a thin slice of apple and
position on the plate as the main body of the
turkey.
Using a peeler, cut strips of
carrot and arrange as feathers at the back of
the turkey.
Cut three thin pieces of apple
(cut out the core so they are more skin than
fruit) and use one for the turkey’s neck,
and 2 for the turkey legs.
Cut a slice of banana for the
head and place on top of the apple neck.
Place a pumpkin seed (or slivered
almonds) for the beak and one for the eye.
Cut open the pomegranate and lift
three small pieces of the jeweled fruit to place
below the neck for the turkey’s wattle.
Cut three small slices of pear
for the turkey’s wing and arrange on top
of the main turkey body.
After everything is assembled,
gently squeeze a bit of orange juice over the
turkey to help keep everything looking fresh
until the dessert is served.
