Pita
Pocket Monsters
Make a scary monster for lunch
or a light dinner!
Ingredients:
16 oz. package Extra-Firm Tofu
1/2 cup Soy Sauce
2 cloves of minced Garlic
1 small Onion, finely chopped
Juice of 1 Lime
Dash of Red Pepper
Optional: Dash of Turmeric
Olive Oil
Whole Wheat Pita Pockets
Assorted Vegetables and Nuts
Sandwich Fillings

Directions:
Note:
all slicing and stovetop cooking must be done
with adult supervision.
Slice the tofu into small rectangles
1/4 inch thick. Add all other ingredients and
place in a bowl.
Marinate the tofu in the bowl for
two hours and refrigerate.
While the tofu is marinating, use
the time to prepare and organize your vegetables.
When tofu is ready, cook on low
heat in a frying pan coated with oil (about a
1/4 cup – enough to cover pan) until it
is golden brown and firm.
Have fun assembling the pita monsters
and get creative!
Here are some suggestions:
Hair—use
shredded salad, spinach or cabbage and thinly
sliced peppers for a crazy hairdo.
Eyes—try thin slices of
cabbage for some drama. Carrots, cucumber slices,
peas, olives, almonds and small tomatoes are also
wonderful.
Mouth—cut slices of pepper
and use corn for teeth. You can use slices of
radish for fangs.
Body—use the browned tofu
for the torso and add string beans, carrots or
celery sticks for the limbs and little tomatoes
for the hands and feet.
Stuff pita with your favorite ingredients
like tuna fish, egg salad or chicken salad.
Servings: One 16 oz. package of
tofu serves approximately 5 people.
