Cranberry Breakfast Bites

So often busy mothers and fathers,
trying to achieve their entire daily goals, shuffle
everyone out the door without a solid breakfast.
As an on-the-run society, we really need to focus
on the basics of a healthy breakfast to jump-start
the busy lives and keep our kids knowing how important
this first meal of the day really is.
Here is a healthy breakfast treat
that can also be made the night before. The recipe
makes 16 servings and can be frozen. Please note
- this recipe does have almonds for those who
are allergic to nuts.
Ingredients:
1/2 Cup of Whole almonds that
are ground in a blender
3 Cups of Whole Quick Oats (grind 1/1/2 cups in
the blender)
1 Large Delicious Apple cut into tiny pieces
1/2 Cup of Canola Oil
2 Large Eggs
I Cup of Brown Sugar
1 Can of Ocean Spray Cranberry Sauce
The Juice of 1 Lime
1 Teaspoon of Vanilla
1/4 Teaspoon of Sea Salt
1/2 Teaspoon of Baking Soda
Cinnamon optional to taste
Directions:
Pre-heat oven to 325°.
Blend the almonds and 11/2 cups
of oatmeal until the ingredients are like a soft
flour in the blender, set aside. Cut apple into
tiny pieces. In a mixing bowl, combine oil, eggs,
brown sugar, cranberry sauce, lime juice and vanilla
until well blended. Add apple pieces and stir
some more. Slowly add the ground oatmeal, almonds
and the remaining (unground) whole oats and mix
until well blended. Stir in salt and baking soda.
When everything is completely mixed, pour into
a 13 x 9 baking pan and bake at 325° for 40
minutes or until a knife inserted comes out clean.
