Cinnamon Oatmeal Cookies

Here’s a nutritious and easy
recipe that the kids will be sure to gobble up
and they’ll have a good time making them
too (just have an adult cut the apples). Enjoy!
1 1/4 cups all-purpose flour
1 1/2 cups of quick oats (ground into flour in
the blender)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks, 1/2 pound) butter, softened
1 1/4 cup packed brown sugar
1 teaspoon vanilla extract
2 eggs
1 cup of finely chopped fresh apple
Optional: 1 cup chopped nuts
Directions:
Combine flour, ground oats, baking soda and salt
in small bowl and set aside. Beat butter, brown
sugar and vanilla in large mixer bowl. Add eggs
one at a time, beating well after each addition.
Gradually beat in flour and ground oat flour mixture.
Stir in apples and cinnamon. Drop by rounded tablespoon
onto ungreased baking sheets.
Bake in preheated 350°F oven
for 12 to 15 minutes or until golden brown. Let
stand for 2 minutes. Remove to wire racks to cool
completely.
Serve with milk or soymilk.
